HERB HONEY

 

Another interesting use of your herbs is to gently infuse or heat them with clover honey. The first step is to place a layer of minced or bruised herb leaves in a sauce pan and cover them with clover honey. This mixture should be warmed very gently for a few minutes. Then, put the flavored honey in a jar and close tightly. This mixture should then be allowed to mature in a warm spot for one to two weeks. After this time has passed, the honey is again warmed and the herbs need to be strained from the honey. The herbs which you may want to try in herb honeys are:
