The preparation of herb vinegars is a delightful experience. You may use seeds, flower petals, fresh leaves o dried herb leaves when making these aromatic vinegars. Herb vinegars are made by a process of infusion. The basic recipe when using dried herbs is: 1 cup bruised or minced leaves to 1 pint of Vinegar. It is very important to use only quality vinegar with your herbs. Allow the vinegar-herb mixture to age for a few days tasting often to see if the herb vinegar suits your taste.
